This coffee is the result of the collective effort of 25 small coffee growers from the Santa Maria community in the Colombian town of Huila. These dedicated growers, including notable names such as Delfin Carvajal, Fernando Tulio Lopez, and Flor Marina Betancourt, are integral to this group and often participate in competitions for the best coffee.
The coffee is grown at an altitude of 1700-2100 meters above sea level and consists of varieties Caturra, Pink Bourbon, Castillo, and Colombia. The decaffeination process uses the Ethyl Acetate (E.A) technique, also known as the "sugar cane" method, where the volatile product (ethanol) is extracted from fermented sugar cane ethanol.
In the sugar cane decaf process, ethyl acetate (EA), a natural compound derived from sugar cane, is used to decaffeinate the coffee. EA binds to chlorogenic acids in caffeine and initiates the separation of caffeine from the coffee beans. The process involves steaming the green coffee beans to open their pores, immersing them in the EA solution, and repeating the process until sufficient decaffeination is achieved. The beans are then steamed again to remove any traces of EA, followed by final drying.
