Hacienda Sonora is located at the foothills of the Poas volcano. The farm utilizes 100% renewable energy generated by a water turbine that converts river flow into power. This energy drives both wet and dry mills and provides free electricity to everyone living and working on the farm. Overall, Hacienda Sonora generously shares its success, paying fair wages to all workers and supporting the local community.
The farm and its mill cover approximately 100 hectares. Of this, 45 hectares are dedicated to shaded coffee land. Coffee trees are surrounded by exotic trees and other native vegetation. This biodiversity supports soil health and maintains nutrient-rich soil, which helps cultivate delicious cherries.
On the remaining land, there are 35 hectares of wild forest reserve and 20 hectares of sugarcane, which has been grown on Hacienda Sonora’s land for over 150 years.
Hacienda Sonora has its own processing mill, allowing the farm to separate lots by variety and create unique micro-lots. The mill is located centrally, right next to the traditional sugarcane mill, which has remained intact for over 150 years.
This cascara comes from coffee processed using the natural method. After selective hand-picking, ripe cherries are washed in clean water and then laid out for drying either on raised beds or terraces, where they are frequently turned to ensure even drying. Once dried, the natural coffee is stored for two months before being hulled in the dry mill on the farm. The dried husks are removed and preserved as cascara. ☕️
