Coffee from Ethiopia that is not a blend of coffees from a large number of farmers is quite rare. The naturally processed lot from farmer Esayas Beriso is dried on African beds after hand-picking and removing overripe or unripe cherries. They are usually turned frequently during the day and covered during the central daytime and nighttime hours. Drying takes 7-10 days. After strict sorting, they are milled and finally packed and ready for sale.
